I recently had the opportunity to enjoy Khao Soi at a local Thai restaurant, and it was outstanding! The rich coconut curry broth had the perfect balance of flavors, with just the right amount of spice. The egg noodles were tender and absorbed the delicious broth beautifully, while the crispy noodles on top added a great crunch.
It was garnished with fresh lime, pickled mustard greens, and shallots, which brightened up the dish perfectly. Each bite was a delightful mix of creamy, savory, and tangy notes. If you’re a fan of Thai cuisine, Khao Soi is a dish you definitely shouldn’t miss!
